Margarita Marinade – Chi-Chi’S
Description
This vibrant marinade captures the fresh, tangy essence of a classic margarita, perfect for infusing meats with bright citrus and herbaceous notes. Blending the rich umami of diced tomatoes and green chilies with sharp lime juice, sweet orange juice, and a hint of honey, it creates a complex flavor profile that cuts through the richness of pork, chicken, or beef. The tequila adds a subtle depth and helps tenderize the proteins, while the garlic and lime zest provide aromatic warmth. Ideal for weekend gatherings or weeknight dinners, this marinade transforms simple cuts of meat into a restaurant-quality meal with minimal effort. Let it work its magic overnight for the best results.Ingredients
Directions
-
In a large recloseable plastic food bag, combine the diced tomatoes, green chilies, orange juice, tequila, vegetable oil, lime juice, honey, garlic, and lime peel.
-
Seal the bag and mix well to combine all marinade ingredients thoroughly.
-
Add the meat to the bag, seal it tightly, and turn over several times to coat the meat thoroughly with the marinade.
-
Place the bag in the refrigerator, turning it occasionally, for 8 hours or overnight to allow the flavors to penetrate the meat.
-
Preheat the broiler.
-
Remove the meat from the marinade, reserving the marinade in a small saucepan.
-
Place the meat on a broiler pan.
-
Broil the meat 7 to 8 inches from the heat source until it reaches your desired doneness.
-
While the meat cooks, bring the reserved marinade in the saucepan to a boil and boil for one minute to kill any bacteria from the raw meat contact.
-
Serve the cooked meat with the boiled marinade as a sauce.
