Directions
-
Preheat the oven to 350 degrees F (175 degrees C).
-
Drain the canned peach slices, reserving the syrup. Cut each slice in half.
-
In a large bowl, combine the ground beef, bread crumbs, beaten eggs, chopped onion, dill weed, salt, pepper, and 1/3 cup of the reserved peach syrup. Mix well until just combined.
-
In a separate small bowl, mix the cooked rice, chopped parsley, and 1 tablespoon of the reserved peach syrup.
-
Pat the meat mixture onto a large sheet of waxed paper or plastic wrap, forming a rectangle approximately 14 x 10 inches and about 3/4-inch thick.
-
Spread the rice mixture evenly over the surface of the meat rectangle.
-
Toss the halved peach slices with the ground nutmeg, then distribute them evenly over the rice layer.
-
Starting from the short side of the rectangle, carefully roll up the meat jelly-roll fashion to enclose the peaches and rice, forming a pinwheel loaf.
-
Press the meat at both ends of the loaf to seal the filling inside.
-
Transfer the loaf to a roasting pan, placing it seam-side down on a rack.
-
Bake in the preheated oven for 1 hour.
-
Brush the top of the loaf with the remaining peach syrup and continue baking for 15 more minutes.
-
Remove from the oven and let the loaf stand for 10 to 15 minutes before slicing.

Note
Ensure the rice is fully cooked and cooled before mixing it with the parsley and syrup to prevent the meat mixture from becoming too wet.
If the loaf feels difficult to roll, ensure the meat layer is thin and even. You can refrigerate the meat rectangle for 10-15 minutes before adding fillings to make it firmer and easier to handle.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat slices in the microwave or oven until warm.
