Description

These vibrant Marinated-Vegetable Kabobs are the perfect balance of sweet, tangy, and savory flavors. Featuring a medley of pearl onions, sweet yellow and green peppers, and tender eggplant, each skewer is brushed with a zesty tarragon and red-wine vinegar marinade that enhances the natural sweetness of the vegetables. The kabobs are roasted until tender-crisp with beautiful caramelized edges, making them an elegant yet easy-to-make appetizer or side dish. Ideal for summer gatherings, potlucks, or a light vegetarian dinner, these kabobs offer a burst of Mediterranean flavor in every bite.

Ingredients

Directions

  1. In a 4-quart saucepan, heat 3 inches of water to a boil.
  2. Add the white and red pearl onions to the boiling water and cook for 5 minutes.
  3. Remove the onions with a slotted spoon and transfer them to a bowl. Set aside.
  4. Add the eggplant cubes to the same boiling water and cook for 1 1/2 minutes.
  5. Drain the eggplant and rinse under cold water to cool slightly. Pat dry with paper towels and set aside.
  6. Remove stems and seeds from the yellow, green, and red peppers. Cut each pepper into quarters, then cut each quarter into 4 pieces.
  7. To assemble the kabobs, alternately thread 4 pieces of pepper, 3 eggplant cubes, 2 white pearl onions, and 1 red pearl onion onto each skewer.
  8. In a small bowl, combine 3 Tbsp tarragon vinegar, 1 Tbsp red-wine vinegar, 2 tsp sugar, 1/2 tsp salt, and 1/4 tsp ground black pepper. Whisk in 1/3 cup olive oil until emulsified.
  9. Brush the assembled kabobs generously with the tarragon marinade and arrange them in rows on baking sheets.
  10. Cover tightly with plastic wrap and refrigerate for 1 hour to marinate. Reserve any remaining marinade for serving.
  11. Preheat oven to 400°F (200°C).
  12. Remove plastic wrap from the kabobs and place baking sheets in the preheated oven.
  13. Bake for 7 to 8 minutes, or until vegetables begin to brown on the bottom.
  14. Rotate the kabobs and bake for an additional 7 to 8 minutes, or until all sides are browned and peppers are tender-crisp.
  15. Transfer the vegetable kabobs to a serving platter and drizzle with any reserved tarragon marinade.
  16. Garnish with fresh thyme sprigs, if desired, and serve immediately or at room temperature.
