Description

This classic Masala Dal is a comforting staple of Indian cuisine, featuring yellow split peas simmered to a creamy consistency and finished with a fragrant tadka. The dish balances earthy turmeric and warm cumin with the sharp bite of red pepper and sweet caramelized onions. It is an effortless yet deeply flavorful side dish that pairs perfectly with steamed rice, naan bread, or potato curries. Ideal for weeknight dinners or casual gatherings, this recipe delivers authentic home-style taste with minimal effort. The simple ingredients transform into a rich, velvety texture that is both nourishing and satisfying. Serve hot with fresh coriander for a burst of freshness.

Ingredients

Directions

  1. Rinse the yellow split peas thoroughly under cold water.
  2. Place rinsed peas in a bowl, cover with hot water, and let soak for 1 hour.
  3. Drain the soaked peas and transfer them to a large pot.
  4. Add 4 1/2 cups of fresh water and the turmeric to the pot.
  5. Bring the mixture to a boil, stirring occasionally to prevent sticking.
  6. Reduce heat to medium-low, partially cover the pot, and simmer for 45 minutes until peas are very tender.
  7. Remove from heat and use a wire whisk to beat the mixture until it is a fine, smooth puree.
  8. Stir in the salt and set the puree aside.
  9. Heat ghee in a skillet over medium-high heat until it is very hot.
  10. Add cumin seeds to the hot ghee and fry for 10 seconds until they sizzle and pop.
  11. Lower the heat and add the finely chopped onions.
  12. Fry the onions for 20 minutes, stirring constantly until they are deeply golden brown and caramelized.
  13. Stir in the red pepper and immediately pour this tempering mixture into the lentil puree.
  14. Stir to combine and simmer the dal over low heat until piping hot.
  15. Garnish with chopped coriander leaves and serve warm.
