Description

These traditional Matzo Meal Cookies offer a delightful balance of crispy edges and a soft, chewy center. Made with just a handful of pantry staples like matzo meal, brown sugar, and butter, they deliver a rich, toffee-like flavor that is both comforting and sophisticated. The addition of sweetened shredded coconut adds a pleasant texture, while the optional jam center provides a burst of fruity sweetness. Ideal for Passover celebrations or as an elegant accompaniment to afternoon tea, these cookies are easy to prepare and store well. Their golden-brown appearance and aromatic vanilla scent make them a cherished treat for family gatherings and holiday tables alike.

Ingredients

Directions

  1. Preheat the oven to 325&# 194;°F (165ðC). Line two baking sheets with parchment paper.
  2. In a small bowl or food processor, pulse the shredded coconut until it is finely minced but not powdery.
  3. In a medium mixing bowl, combine the minced coconut, matzo meal, and brown sugar.
  4. Add the softened butter (or margarine), water, and vanilla extract to the dry ingredients.
  5. Mix thoroughly with a spoon or your hands until the mixture forms a cohesive, crumbly dough that sticks together when pressed.
  6. Scoop tablespoon-sized portions of the dough and roll them into balls.
  7. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Gently flatten each ball with the palm of your hand or the bottom of a glass to form a cookie about 1 1/2 inches wide.
  9. Bake for 25 to 35 minutes, rotating the pans halfway through, until the cookies are golden brown and firm to the touch.
  10. Remove from the oven and let the cookies cool on the baking sheet for 3 minutes before transferring them to a wire rack to cool completely.
  11. If using jam, press the handle end of a wooden spoon into the center of each cookie to create a small depression.
  12. Fill each indentation with 1/4 to 1/2 teaspoon of jam, being careful not to overfill.
