This Mediterranean Roast Chicken is a comforting, aromatic centerpiece that brings the flavors of the coast to your dinner table. Infused with earthy rosemary, fragrant sage, and bright lemon juice, the chicken stays incredibly juicy while developing a golden, herb-crusted exterior. The combination of pure olive oil and fresh herbs creates a savory, herbaceous profile that pairs beautifully with roasted vegetables or crusty bread. It&# 226;€™s an elegant yet approachable dish, perfect for family gatherings or a sophisticated weeknight meal. Simple ingredients transform into a restaurant-quality experience with minimal effort, making it a reliable favorite for any occasion where you want something hearty, flavorful, and undeniably satisfying.

Ingredients

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Rinse the chicken inside and out; pat thoroughly dry with paper towels. Remove any excess fat.
  3. In a small bowl, combine the crushed rosemary, ground sage, salt, and pepper.
  4. Place the chicken breast-side up on a large sheet of heavy-duty aluminum foil inside a roasting pan.
  5. Season the inside of the chicken cavity with half of the herb mixture.
  6. In a separate small bowl, whisk together the fresh lemon juice and olive oil.
  7. Spoon 2 tablespoons of the lemon-oil mixture into the chicken cavity.
  8. Pour the remaining lemon-oil mixture over the outside of the chicken.
  9. Rub the remaining herb mixture over the skin of the chicken, ensuring even coverage.
  10. Bring the edges of the foil together and fold them over several times to seal the chicken tightly in a packet.
  11. Roast in the preheated oven for 1 hour.
  12. Remove the pan from the oven and reduce the temperature to 375 degrees F (190 degrees C).
  13. Carefully open the foil packet. Baste the chicken with the pan juices.
  14. Return the chicken to the oven, uncovered, and roast for an additional 15 to 30 minutes until the skin is golden brown.
  15. Check for doneness using a meat thermometer inserted into the thickest part of the thigh; it should read 185 degrees F (85 degrees C). The juices should run clear, and the flesh should no longer be pink.
  16. Transfer the chicken to a serving platter. Let rest for 5 minutes before carving.

Note

For best results, ensure the chicken skin is thoroughly dry before seasoning to help achieve a crispier texture during the final roasting stage.

Storage: Allow leftovers to cool completely before placing them in an airtight container. Refrigerate for up to 3-4 days. Reheat gently in the oven or microwave.

Variations: Add halved lemons and quartered onions to the foil packet for extra aroma and flavor. You can also substitute fresh herbs for dried if available, using about three times the amount.

Safety: Always use a meat thermometer to ensure the chicken reaches a safe internal temperature. Avoid piercing the breast meat when checking the thigh to preserve juices.
