Ingredients

Directions

  1. In a small bowl, whisk together fish sauce, dark soy sauce, lime juice, vinegar, and palm sugar until the sugar is dissolved. Set aside.
  2. In a wok or deep skillet, heat oil to 350ðF (175ðC).
  3. Drop small bundles of rice sticks into the hot oil; they will puff up instantly. Fry for about 15 seconds until crisp and golden.
  4. Transfer fried noodles to a pan lined with paper towels. Keep warm in a low oven. Repeat with remaining noodles.
  5. Dip your hand in beaten eggs and drizzle over the hot oil from about 8 inches high to create lacy egg nets.
  6. Fry egg nets until golden brown on both sides. Transfer to paper towels to drain.
  7. Heat a second wok over medium-high heat with a small amount of oil. Add onion, garlic, and chile; sauté until fragrant.
  8. Add minced pork, chicken, or shrimp and stir-fry just until cooked through.
  9. Pour the prepared sauce mixture into the wok. Bring to a boil and cook until slightly thickened.
  10. Reduce heat to low. Add a quarter of the fried noodles and egg crisps to the sauce. Toss gently to coat.
  11. Continue adding remaining noodles and eggs in batches, tossing gently to coat without crushing the crisp noodles.
  12. Transfer to a serving platter immediately. Garnish with sliced green onions and serve hot.
