This authentic Texas-style chili is a robust, meat-heavy dish that relies on long, slow cooking to develop deep, complex flavors. Unlike bean-heavy versions, this recipe focuses on ground beef and pork, enriched with bacon fat and strips of bacon for a smoky richness. The spice blend, featuring cocoa, coffee, and Mexican oregano, adds a sophisticated depth without overwhelming heat. It’s the perfect comfort food for cold evenings, game day gatherings, or any time you crave a substantial, satisfying meal. Serve it hot with shredded cheese and sour cream for a classic Southern experience.

Directions
-
In a large skillet over medium-high heat, render the bacon fat and cook the bacon strips until crisp. Remove bacon, crumble it, and set aside.
-
In the same skillet with the remaining bacon fat, brown the ground beef and ground pork thoroughly. Drain any excess grease, but leave a small amount for flavor.
-
In a blender, combine the V-8 juice, chopped onion, green and red peppers, stewed tomatoes, sugar, brown sugar, beef soup base, instant coffee, cocoa, paprika, chili powder, cumin, thyme, salt, garlic powder, Mexican oregano, cilantro, and Tabasco sauce. Blend until smooth.
-
Pour the blended mixture into a large slow cooker.
-
Add the browned meat mixture, crumbled bacon, celery, and bay leaves to the slow cooker. Stir gently to combine all ingredients.
-
Cover and cook on LOW for 8 to 12 hours, or on HIGH for 4 to 6 hours. The longer it cooks, the thicker and richer the flavor will become.
-
Discard the bay leaves before serving. Serve hot in bowls, topped with shredded cheddar cheese, sour cream, or diced onions if desired.
