Description

This Millet-Cauliflower Soup is a hearty, nutrient-dense meal that blends the nutty earthiness of toasted millet with the mild sweetness of cauliflower. The secret to its luxurious texture lies in a blended mixture of soaked cashews, white miso, and nutritional yeast, which creates a rich, dairy-free creaminess without any heavy dairy products. Aromatic vegetables like celery, onion, and carrot form a savory base, enhanced by fresh herbs such as basil, mint, and chervil. Perfect for chilly evenings or meal prep, this vegan soup offers a satisfying mouthfeel and robust flavor profile that appeals to both vegetarians and omnivores alike.

Directions

  1. Heat 2 tablespoons of oil in a large soup pot over medium heat.
  2. Add the millet and toast it, stirring frequently, until it turns golden brown and begins to pop lightly.
  3. Pour in 1 1/2 cups of water, bring to a boil, then reduce heat and simmer for 20 minutes until the millet is tender.
  4. While the millet cooks, heat a little oil in a medium skillet over medium heat.
  5. Sauté the chopped celery, green pepper, onion, garlic, and carrot until the onion becomes translucent and vegetables are softened, about 5-7 minutes.
  6. To the pot with the cooked millet, add 6 cups of water, the chopped cauliflower, and the bay leaf.
  7. Stir in the sautéed vegetable mixture, dry vegetable soup base, basil, mint, chervil, thyme, and ground celery seed.
  8. Bring the soup to a simmer and cook for 20 minutes until the cauliflower is tender.
  9. In a blender, combine the white miso, raw cashews, 1 cup of water, and nutritional yeast.
  10. Blend on high speed until completely smooth and creamy.
  11. Pour the cashew-miso mixture into the soup pot and stir well to combine.
  12. Simmer the soup for an additional 10 minutes to allow flavors to meld.
  13. Remove the bay leaf. Taste and adjust salt if needed, adding more water if a thinner consistency is desired.
