Description

This elegant appetizer or light main features plump jumbo shrimp stuffed with a rich mixture of fresh lump crabmeat, crushed saltines, and sharp mustard. The filling is bound with egg and mayonnaise, creating a tender, savory bite that contrasts beautifully with the sweet shrimp. Finely chopped onions, celery, and green peppers add texture and freshness to every spoonful. Baked until hot and finished under the broiler, these shrimp develop a deliciously crisp top while remaining moist inside. Perfect for holiday gatherings, cocktail parties, or a special weeknight dinner, this dish feels indulgent and sophisticated. Serve immediately for the best flavor and texture.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Peel and devein shrimp, leaving tails intact.
  3. Cut a slit almost through the back of each shrimp using a paring knife.
  4. Open the shrimp along the slit and flatten slightly.
  5. Bring water to a boil in a large pot.
  6. Add shrimp to boiling water and cook for 1 minute.
  7. Drain shrimp immediately and place them in a shallow baking dish.
  8. In a skillet, melt 1/4 cup butter over medium heat.
  9. Add chopped onion, green pepper, and celery; saut until tender.
  10. In a large bowl, combine drained crabmeat, beaten egg, crushed saltines, mayonnaise, prepared mustard, Worcestershire sauce, and ground red pepper.
  11. Gently stir the sauted vegetable mixture into the crabmeat mixture.
  12. Top each flattened shrimp with 3 tablespoons of the crabmeat stuffing.
  13. Sprinkle paprika over the stuffed shrimp.
  14. Drizzle the remaining 1/4 cup melted butter over the tops.
  15. Bake uncovered at 350F (177C) for 20 minutes.
  16. Switch oven to broil; broil 5 1/2 inches from heat for 6 minutes, basting twice with pan drippings.
  17. Serve immediately while hot.

Note

The original ingredient list appears incomplete, missing key filling components such as lump crabmeat, egg, saltines, mayonnaise, mustard, Worcestershire sauce, and paprika. These are included in the directions and should be added to your shopping list.

Use fresh lump crabmeat for the best texture and flavor. If using canned, ensure it is pasteurized and drain well.

Do not overcook the shrimp in the boiling water step; one minute is sufficient to partially cook them without making them rubbery, as they will finish cooking in the oven.

Keep an eye on the shrimp while broiling to prevent burning, as oven temperatures can vary.

For a lighter version, substitute half-and-half for the mayonnaise, though the texture will be less rich.
