Directions
-
In a large microwave-safe bowl or glass measure, combine the bottled mincemeat, packed brown sugar, butter, orange juice, orange rind, and rum or brandy.
-
Microwave the mixture on high for 3 minutes, stopping once to stir, until the butter is melted and the mixture is hot.
-
In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and cinnamon.
-
Pour the hot mincemeat mixture over the dry ingredients, adding the beaten eggs and chopped nuts.
-
Stir everything together until the batter is well combined and smooth.
-
Lightly grease a 2-quart ring mold or souffl dish and line the bottom with parchment paper; grease the paper as well. If using a souffl dish, place a greased glass in the center to create a ring shape.
-
Spoon the batter evenly into the prepared dish.
-
Place an inverted dinner plate in the bottom of your microwave and set the dish on top of it to prevent sticking and ensure even cooking.
-
Microwave on medium power for 10 minutes.
-
Rotate the dish 180 degrees and microwave on high for 2 to 4 more minutes, or until the top is no longer moist and a skewer inserted comes out clean.
-
Let the pudding stand on the counter for 15 minutes to set.
-
Run a knife around the outside of the dish to loosen the pudding.
-
Invert the pudding onto a serving plate and let it cool completely before slicing.
-
To serve, reheat individual portions uncovered in the microwave on medium for 4 to 6 minutes until warm. Accompany with rum eggnog sauce.
