Description

This Mint and Yogurt Bread is a delightful twist on traditional baking, combining the tender crumb of yogurt-enriched dough with the refreshing aroma of fresh mint and bright lemon zest. The yogurt acts as a natural tenderizer, resulting in a loaf that stays moist and soft for days. It features a subtle herbal note that pairs beautifully with savory meals or as a unique accompaniment to tea. Perfect for brunch or a light dinner, this bread is easy to mix up and offers a fresh alternative to standard white bread. The addition of lemon rind adds a zesty counterpoint to the cool mint, creating a balanced flavor profile that is both comforting and invigorating.

Ingredients

Directions

  1. Combine the warm water and honey in a small bowl. Sprinkle the yeast over the top and let it sit for 5&# 226;ÂÂ10 minutes until foamy.
  2. In a large mixing bowl, whisk together the bread flour and salt.
  3. Add the yogurt, yeast mixture, lemon zest, and chopped mint to the flour. Mix until a shaggy dough forms.
  4. Knead the dough on a lightly floured surface for 8âÂÂ10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
  6. Punch down the dough and shape it into a loaf. Place it in a greased 9x5-inch loaf pan.
  7. Cover and let it rise again for 30âÂÂ45 minutes until it crests just above the rim of the pan.
  8. Preheat the oven to 375ðF (190ðC). Bake the bread for 35âÂÂ40 minutes until golden brown and the internal temperature reaches 190ðF.
  9. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Note

For best flavor, use fresh mint rather than dried. If using dried mint, reduce the amount to 1 tablespoon.

Store the bread in an airtight container at room temperature for up to 3 days, or freeze slices for longer storage.

You can substitute Greek yogurt for regular plain yogurt for a thicker dough and tangier flavor.
