Note

To make the minted simple syrup: Combine 1 cup water, 1 cup sugar, and 1/4 cup packed fresh mint leaves in a small saucepan. Bring to a boil, reduce heat, and simmer for 5 minutes. Remove from heat, cover, and let steep for 20 minutes. Strain and cool.

If you do not have an ice cream maker, pour the chilled puree into a shallow metal pan. Freeze for 1 hour, then stir vigorously with a fork to break up ice crystals. Repeat every 30-45 minutes for 3-4 hours until thick and smooth.

For best flavor, use very ripe, sweet honeydew melons.

Sorbet can be stored in the freezer for up to 2 months. Let it sit at room temperature for 5-10 minutes before scooping for easier serving.
