Directions
-
Drain the pineapple chunks, reserving the juice; you will need about 20 ounces of juice total.
-
Prepare the vegetables: slice 1 large green, 1 large red, and 1 large yellow bell pepper; slice 1 large Vidalia onion.
-
Trim the stem ends from 1 lb of whole mushrooms and drain 1 6 oz can of pitted small black olives well.
-
Trim the ends from 1/2 lb of fresh snow peas.
-
Line the bottom of a slow cooker set to HIGH with the chicken breasts.
-
Pour the reserved pineapple juice and 1/2 cup of lime juice over the chicken.
-
Cover and cook on HIGH for 4 to 6 hours, or until the chicken is tender but not falling apart.
-
Once the chicken is tender, layer the mushrooms, bell pepper slices, 1 can of pineapple chunks, onion slices, olives, and snow peas on top of the chicken in the slow cooker.
-
Top the vegetables with 2 oz of shaved butter.
-
Cover and cook for an additional 1 to 1.5 hours, or until the vegetables are tender but not mushy.
-
Remove the chicken and vegetables from the broth and place them on a warmed utility platter.
-
Cover the platter and place it in a 200ðF (93ðC) oven to keep warm while you finish the rice.
-
Check the broth; it should measure approximately 1 quart. Add salt to taste and add 1 14 oz box of natural instant brown rice.
-
Cover and cook the rice on HIGH according to package directions until done.
-
Place the cooked rice in the center of a large, warmed presentation platter.
-
Scoop the vegetable mixture over the top of the rice and arrange the chicken pieces around the perimeter, allowing the vegetables to spill over the chicken.
