Description

This luxurious Mocha Whipped Cream Filling combines the deep, robust flavor of unsweetened cocoa with the aromatic kick of coffee zest and a splash of liqueur. The heavy cream is whipped to perfection, creating a stable yet airy texture that holds its shape beautifully between cake layers. The addition of Kahlua or Tia Maria adds a sophisticated adult note, balancing the sweetness of the confectioner's sugar. Ideal for graham cracker cakes or chocolate sponges, this filling provides a creamy, indulgent contrast to crisp or dense cake textures. Ingredients

Directions

  1. Pour the well-chilled heavy cream into a well-chilled mixing bowl.
  2. Beat the cream using an electric mixer fitted with chilled beaters or a whip attachment.
  3. Stir in the confectioner's sugar and 3 tablespoons of unsweetened cocoa.
  4. Beat on medium speed until the cream begins to thicken.
  5. Add the coffee zest and liqueur.
  6. Continue whipping until the cream reaches the soft peak stage, then remove from the mixer.
  7. Finish beating by hand using a wire whisk, whipping until the cream is quite thick but not grainy.
  8. Refrigerate the filling until ready to use.
  9. To assemble the cake, split each cake layer into halves.
  10. Set the first layer on a serving plate, top side down.
  11. Fit a pastry bag with a large plain tube and fill it one-third full with the mocha whipped cream.
  12. Starting half an inch from the edge, pipe a circle of cream around the top of the layer.
  13. Fill the center of the circle with additional cream, smoothing the surface with a large metal offset spatula.
  14. Repeat with the second and third layers, placing them cut side up.
  15. Arrange the top layer cut side down, aligning layers so the sides of the cake are even.
  16. Empty the remaining whipped cream into the pastry bag.
  17. Pipe half-inch whipped cream dots on the top layer, beginning at the outer edge.
  18. Ensure each dot touches the preceding one, forming a continuous ring.
  19. Continue working toward the center of the cake until the entire surface is covered.
  20. Place the remaining 1/2 teaspoon of cocoa in a very fine mesh strainer.
  21. Gently tap the strainer over the surface of the cake to give it a light dusting of cocoa.
  22. Place the cake in the refrigerator uncovered to chill.
  23. Remove the cake from the refrigerator at least 1 hour before serving.
