Directions
-
In a large mixing bowl, pour the boiling water over the lime gelatin powder and stir until completely dissolved.
-
Add the cold water, vinegar, salt, and white pepper (if using) to the dissolved gelatin and stir well to combine.
-
Pour 1 cup of the liquid gelatin mixture into a 6-cup mold and place it in the refrigerator to chill.
-
Refrigerate the remaining gelatin mixture in the bowl for 30 minutes, or until it begins to thicken.
-
Beat the partially set gelatin with a rotary beater or electric mixer until it becomes smooth and creamy.
-
Gradually beat in the mayonnaise until the mixture is light and fluffy.
-
Fold in the shredded carrots, diced cucumbers, chopped celery, green pepper, and chopped onion.
-
Once the first layer in the mold is almost set, spoon the creamy vegetable mixture over it.
-
Smooth the top with a spatula and refrigerate the mold for at least 4 hours, or until the salad is firm.
-
To serve, run a knife around the edge of the mold and invert onto a serving plate.
