Description

These Monster Cinnamon Rolls are the ultimate comfort food treat, perfect for lazy weekend mornings or special holiday breakfasts. The dough is incredibly tender and airy, rising to a lofty height before being rolled out and filled with a generous layer of buttery brown sugar and cinnamon. Each roll is a substantial treat, offering a perfect balance of sweet spice and soft, brioche-like texture. Topped with a thick, luscious cream cheese frosting that melts slightly into the warm pastry, these rolls are irresistible.

Ingredients

Directions

  1. Heat the milk, 1/4 cup sugar, salt, and 1/2 cup butter in a small saucepan until the butter is melted. Remove from heat and set aside to cool to lukewarm temperature.
  2. In a large mixing bowl or stand mixer bowl, sprinkle the yeast over the warm water. Add the remaining 1 teaspoon of sugar, stir gently, and let stand for 10 minutes until the mixture is bubbly and foamy.
  3. Add the lukewarm milk mixture and eggs to the yeast mixture. Beat until well combined.
  4. Gradually add the flour, one cup at a time, mixing until the dough becomes stiff and pulls away from the sides. You may not need all the flour; add only enough to form a soft but manageable dough.
  5. Turn the dough out onto a lightly floured surface. Knead by hand for 10 minutes until smooth and satiny. Alternatively, use a dough hook attachment on an electric mixer and knead for 5 minutes until the dough cleans the sides of the bowl.
  6. Place the dough in a large buttered bowl, turning once to coat the top with butter. Cover loosely with a kitchen towel or plastic wrap.
  7. Let the dough rise in a warm place for about 1 hour, or until it has doubled in bulk.
  8. Punch the dough down to release air. Roll it out on a lightly floured surface into a large rectangle, approximately 24x36 inches.
  9. In a small bowl, beat together the brown sugar, 2 1/2 sticks of softened butter, and cinnamon until well combined and smooth.
  10. Spread the cinnamon-sugar mixture evenly over the entire surface of the rolled-out dough.
  11. Roll the dough up tightly lengthwise. Cut the log into 2-inch intervals to create the rolls.
  12. Place the rolls seam-side down in two buttered 9x13 inch glass baking dishes.
  13. Cover the dishes and let the rolls rise again for 30 to 45 minutes until puffy.
  14. Preheat the oven to 350°F (175°C).
  15. Bake the rolls for 20 to 25 minutes, or until they are golden brown on top.
  16. While the rolls are baking, prepare the frosting. Beat the softened cream cheese, whipping cream, and vanilla extract together until smooth. Gradually add the sifted confectioner's sugar, beating until the frosting is thick but spreadable. Add more sugar if necessary to reach desired consistency.
  17. Immediately upon removing the rolls from the oven, spread the cream cheese frosting over the warm rolls. Serve while still warm.
