Description

These delightful no-bake treats are a festive favorite for holiday cookie trays and special occasions. The recipe combines melted butter and semi-sweet chocolate with crunchy walnuts and vibrant mini marshmallows, creating a sweet, rich, and satisfying bite. As the chocolate log chills, it holds its shape perfectly, allowing you to slice it into round discs that reveal the colorful marshmallow specks inside, resembling beautiful stained glass church windows. They are easy to make, require no baking, and can be prepared ahead of time. Serve them plain or with a smear of cream cheese for an extra creamy contrast. A charming addition to any dessert spread.

Ingredients

Directions

  1. In a large saucepan, melt the butter and chocolate chips over low heat, stirring frequently until completely smooth and melted.
  2. Remove the saucepan from the heat and stir in the vanilla extract and chopped walnuts.
  3. Allow the chocolate mixture to cool for about 15 minutes, until it is cool to the touch but still fluid.
  4. Fold in the multi-color mini marshmallows until they are evenly coated with the chocolate mixture.
  5. Lay out two 12-inch sheets of waxed paper. Sprinkle 1/2 cup of flaked coconut onto the center of each sheet.
  6. Divide the marshmallow-chocolate mixture in half. Spoon one half lengthwise down the center of one waxed paper sheet, over the coconut.
  7. Shape the mixture into a 2-inch wide log, approximately 12 inches long.
  8. Roll the log gently in the coconut to coat the sides and bottom evenly.
  9. Use the waxed paper to wrap the log firmly, folding the ends snugly to maintain the cylindrical shape.
  10. Repeat the process with the remaining half of the mixture and the remaining 1/2 cup of coconut on the second sheet of waxed paper.
  11. Refrigerate the wrapped logs until firm, for at least 2 hours or overnight.
  12. Unwrap the logs and slice into 1/4-inch thick rounds using a sharp knife.

Note

These cookies are perfect for brightening up holiday cookie trays. The colorful marshmallows inside create a stunning stained-glass effect when sliced.

For best results, ensure the chocolate mixture cools sufficiently before adding the marshmallows so it can coat them well without being too hot.

Storage: Keep the sliced cookies in an airtight container in the refrigerator for up to one week. They can also be frozen for longer storage; thaw in the refrigerator before serving.

Variation: Serve these plain or spread with a thin layer of cream cheese or butter for added richness.

Tip: If the chocolate becomes too thick to roll, let it sit at room temperature for a few minutes to soften slightly before rolling.
