Mr. Food’S Fast Scallops
Description
These fast scallops are a perfect weeknight luxury, combining tender seafood with a vibrant, creamy sauce. The mixture of mayonnaise, lemon juice, and hot pepper sauce creates a tangy, slightly spicy glaze that coats the scallops beautifully. Cooked quickly over high heat, the scallops develop a golden sear while remaining juicy inside. The scallions add a fresh bite that balances the richness of the oil and mayo. Serve immediately over rice or with crusty bread to soak up the delicious sauce. It is an elegant yet simple dish that feels gourmet but requires minimal effort.Ingredients
Directions
-
In a small bowl, whisk together the mayonnaise, chopped scallions, 3 tablespoons of olive oil, lemon juice, Worcestershire sauce, and hot pepper sauce. Set aside.
-
Pat the sea scallops dry with paper towels to ensure a good sear. Season both sides with salt and freshly ground pepper.
-
Heat a large nonstick skillet over high heat. Add the remaining 2 tablespoons of olive oil and swirl to coat the pan.
-
Add the scallops to the hot skillet in a single layer. Cook without moving for 1-2 minutes until a golden crust forms on the bottom.
-
Flip the scallops and cook for another 1-2 minutes until just opaque in the center.
-
Return the prepared sauce to the skillet. Toss the scallops gently to coat them evenly in the sauce, heating through for about 30 seconds.
-
Remove from heat immediately and serve warm.

Note
Scallops cook very quickly. Avoid overcooking, as they will become rubbery. They are done when opaque and slightly firm to the touch.
If using bay scallops, reduce the cooking time to 30-60 seconds per side.
Ensure the pan is very hot before adding the scallops to get a proper sear rather than steaming them.
For a dairy-free version, ensure your mayonnaise is egg-based or use a vegan mayo substitute.
