Description

These Mr Pibb Pralines offer a nostalgic twist on traditional Southern pralines by using the distinctively spiced cola syrup for a deep, complex sweetness. The result is a soft, fudge-like confection that balances the nutty crunch of pecans with the smooth melt of marshmallows. Perfect for holiday gift baskets, cookie exchanges, or as a sweet treat to pair with coffee. They are surprisingly easy to make, requiring only a few pantry staples and a candy thermometer to ensure the perfect consistency.

Ingredients

Directions

  1. Line a baking sheet with wax paper or parchment paper and set aside.
  2. In a heavy saucepan, combine granulated sugar, packed brown sugar, and Mr. Pibb.
  3. Place the saucepan over medium-low heat and stir constantly to dissolve the sugars.
  4. Attach a candy thermometer to the side of the pan and continue cooking, stirring frequently, until the mixture reaches the soft-ball stage (235&# 194;°F (113ðC) (116ðC)to 240ðF).
  5. Remove the saucepan from the heat immediately once the temperature is reached.
  6. Stir in the miniature marshmallows and pecan halves until the marshmallows are completely melted and incorporated.
  7. Quickly drop heaping tablespoons of the mixture onto the prepared wax paper, spacing them apart.
  8. Allow the pralines to cool completely at room temperature until firm, about 1 to 2 hours.

Note

Use a candy thermometer for accuracy, as the difference between soft-ball and hard-ball stage is significant for texture.

If you do not have Mr. Pibb, you can substitute with Dr Pepper or another dark cola, though the flavor profile will vary slightly.

Store in an airtight container at room temperature for up to two weeks. Do not refrigerate, as humidity can cause the sugar to seize and become grainy.

Work quickly when dropping the candies onto the paper, as the mixture will begin to set as it cools.
