Mung Dal With Black Mustard Seeds
Description
This classic Mung Dal is a staple of Indian home cooking, offering a perfect balance of earthy lentils and bright, tangy flavors. The yellow split mung beans are simmered until tender and then whisked into a smooth, comforting puree. The dish is elevated by a traditional tempering (tadka) of sizzling black mustard seeds, green chilies, and ghee, which adds a nutty aroma and a gentle kick of heat. Finished with fresh lemon juice and cilantro, this dal is vibrant and satisfying. It pairs beautifully with steamed rice or warm rotis, making it an ideal weeknight dinner or a hearty lunch. Simple ingredients come together to create a dish that is both nourishing and deeply flavorful.Ingredients
Directions
-
Rinse the yellow split mung beans thoroughly under cold water until the water runs clear.
-
Place the rinsed beans in a large pot with the turmeric and grated ginger.
-
Add 4 cups of water and bring the mixture to a boil over high heat, stirring occasionally.
-
Reduce the heat to medium-low, partially cover the pot, and simmer for about 30 minutes until the lentils are very tender and have begun to break down.
-
Remove from heat and use a wire whisk to beat the lentils until they form a smooth, creamy puree.
-
Stir in the salt and lemon juice, then adjust seasoning to taste. Keep the dal warm.
-
In a small frying pan, heat the ghee over high heat until it is very hot but not smoking.
-
Carefully add the black mustard seeds and fry until they begin to sputter and turn slightly grey, about 30-60 seconds.
-
Add the chopped green chilies and stir rapidly for a few seconds until fragrant.
-
Turn off the heat and immediately pour the tempering over the warm dal puree.
-
Gently fold in the chopped fresh coriander leaves and serve immediately.
