Description

This classic Cincinnati chili features ground beef simmered with a complex blend of spices, vinegar, and tomato paste. Served over cooked vermicelli noodles and topped with grated cheddar cheese and raw onion, it offers a savory, slightly sweet, and spicy flavor profile. A hearty and satisfying main dish perfect for weeknight dinners.

Directions

  1. Heat the butter in a large heavy skillet over medium-high heat.
  2. Add the ground beef to the skillet.
  3. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned.
  4. Stir in the bay leaves, onion, garlic, cinnamon, allspice, vinegar, dried red pepper, caribe chile, salt, ground red chile, cumin, oregano, tomato paste, and water.
  5. Taste and adjust seasonings. If the flavor is too sweet, add a small amount of vinegar; if not spicy enough, add a small amount of ground chile.
  6. Bring the mixture to a boil, then lower the heat and simmer, uncovered, for 2 to 4 hours.
  7. Add the kidney beans to the mixture 30 minutes before serving.
  8. Place a small amount of the cooked vermicelli in individual bowls.
  9. Spoon on a generous amount of chili.
  10. Top with grated cheese and raw onion, or pass in individual bowls.
