Directions
-
Cut the tops off the wholemeal rolls and reserve them as lids.
-
Carefully scoop out most of the soft crumb from inside the rolls, leaving a hollow shell.
-
Crush the garlic clove with a pinch of salt.
-
Mix the crushed garlic, 1/2 teaspoon chopped rosemary, and a good grinding of black pepper into the softened 2 1/2 oz of butter.
-
Spread this garlic-herb butter thickly over the inside of the hollowed-out bread shells and their lids.
-
Place the bread shells and lids on a baking tray.
-
Preheat the oven to 400F (200C).
-
Bake the bread shells for 10 minutes until they are heated through and slightly crisp.
-
Meanwhile, heat a large frying pan over medium heat.
-
Add the remaining 1/2 oz of butter to the pan.
-
When the butter foams and the foam subsides, add the sliced mushrooms.
-
Saut the mushrooms, stirring frequently, for 4-5 minutes until they reduce in size and intensify in flavor.
-
Pour the double cream into the pan with the mushrooms.
-
Let the cream bubble for a few seconds, then stir for another minute until the mushrooms are coated in the sauce.
-
Remove the pan from the heat and add the remaining chopped rosemary.
-
Season the mushroom mixture with salt and pepper to taste.
-
Pile the creamy mushroom mixture into the toasted bread shells.
-
Top with the bread lids and serve immediately.

Note
For best results, serve the croustades immediately while the bread is still crisp and the filling is hot.
You can substitute wholemeal rolls with sourdough or white bread rolls depending on preference.
If you prefer a lighter version, you can use light cream instead of double cream, though the texture will be less rich.
Ensure the mushrooms are dry before sauting to prevent them from steaming rather than browning.
This dish pairs excellently with a large green salad or a tomato salad on the side.
