Description

This intense mushroom essence transforms dried Boletus mushrooms into a potent, savory liquid gold. By rehydrating the mushrooms, simmering them, and then carefully straining and reducing the liquid, you capture every ounce of their rich, earthy flavor. The addition of shallots, peppercorns, mace, and bay leaf adds aromatic complexity and depth. This essence is a fantastic vegan alternative to meat-based stocks or a powerful booster for vegetarian soups, risottos, and pan sauces. It stores beautifully in the freezer, allowing you to add an instant burst of umami to any dish. Perfect for creating luxurious sauces or enriching broths without the need for long simmering times every time you cook.

Ingredients

Directions

  1. Place the dried mushrooms in a large bowl and cover with 4 cups of very warm water.
  2. Press the mushrooms underwater, weight them with a small plate or saucer, and let them soak for at least 6 hours or overnight until very soft.
  3. Lift the softened mushrooms from the liquid using a slotted spoon, reserving the soaking liquid, and chop the mushrooms finely.
  4. Pour the soaking liquid carefully into a clean bowl, leaving behind any sediment at the bottom of the original bowl.
  5. Let the liquid settle again and decant it into another container if necessary to ensure all grit is removed.
  6. Combine the chopped mushrooms with the remaining 2 cups of water in a saucepan and bring to a simmer.
  7. Cover and simmer the mushrooms for 20 minutes.
  8. Set a sieve lined with fine nylon net or two layers of damp cheesecloth over a bowl.
  9. Pour the simmered mushrooms and their liquid into the sieve and press hard to extract all liquid, discarding the solid debris.
  10. Allow this second liquid to settle and decant it carefully to remove any remaining sediment.
  11. Combine the strained mushroom liquid, the reserved soaking liquid, shallots, peppercorns, mace, and bay leaf in a saucepan.
  12. Bring the mixture to a boil over medium-high heat, then reduce heat and simmer briskly, uncovered, until reduced to 2 cups.
  13. Strain out the solids and let the concentrated liquid settle one last time to remove any final sediment.
  14. Decant the cooled essence into an ice cube tray and freeze.
  15. Once frozen, remove the cubes and store them in an airtight freezer container.
