  1. Preheat oven to 375 degrees Fahrenheit (191&# 194;°C).
  2. In a small bowl, combine 6 tablespoons of the soft butter with minced shallots, minced garlic, minced parsley, finely minced celery, salt, and freshly ground black pepper. Mix until well blended to create the herbed butter.
  3. Remove the stems from the large mushrooms and reserve them for another use. Clean the mushroom caps if necessary.
  4. Heat the remaining butter in a skillet over medium heat. Add the mushroom caps and turn to coat on all sides, heating them through.
  5. Arrange the mushroom caps in the depressions of a snail pan, in scallop shells, or in a shallow baking-serving dish.
  6. Place a scant teaspoon of the herbed butter into each mushroom cap.
  7. Add one drained canned snail (escargot) on top of the butter in each cap.
  8. Cover each snail with a little more of the herbed butter.
  9. Bake in the preheated oven for about 15 minutes, until heated through and bubbling.
  10. Serve immediately while hot.
