Ingredients

Directions

  1. Scrub mussels clean in several changes of fresh water and pull off beards.
  2. Discard any mussels that are cracked or do not close tightly when tapped.
  3. Soak saffron strands in 1 tablespoon of boiling water.
  4. Put mussels into a large saucepan with dry white wine and 1 1/2 cups water.
  5. Cover and cook over high heat, shaking pan frequently, 6-7 minutes or until shells open.
  6. Remove mussels, discarding any which remain closed.
  7. Strain the cooking liquid through a fine sieve and reserve.
  8. Heat butter and olive oil in a clean saucepan over medium heat.
  9. Add onion, garlic, leek, and fenugreek and cook gently for 5 minutes until softened.
  10. Stir in flour and cook for 1 minute to eliminate raw flour taste.
  11. Add the saffron mixture (with its water), 2 1/2 cups of the reserved mussel cooking liquid, and chicken stock.
  12. Bring to a boil, then cover and simmer gently for 15 minutes.
  13. Meanwhile, keep 8 mussels in their shells for serving and remove the remaining mussels from their shells.
  14. Add all shelled mussels and the 8 reserved mussels-in-shell to the soup.
  15. Stir in chopped parsley, salt, pepper, and whipping cream.
  16. Heat through for 2-3 minutes without boiling vigorously.
  17. Garnish with parsley sprigs if desired, and serve hot.
