Description

  1. Preheat the oven to 425&# 194;°F (220°C).
  2. Butter and flour an 8-inch round cake pan. Cut a round of waxed paper to fit the bottom, butter it, and place it in the pan.
  3. In a small saucepan over very low heat or in a microwave, melt the chocolate with the butter. Set aside to cool slightly.
  4. In the top of a double boiler over very hot water, whisk the eggs with the sugar.
  5. Beat over hot water until the sugar dissolves and the mixture is just lukewarm.
  6. Remove the top of the double boiler from the heat and beat the eggs vigorously until they quadruple in volume and become quite thick.
  7. Gently fold the flour into the egg mixture.
  8. Stir about 1/4 of the egg mixture into the melted chocolate to temper it.
  9. Gently fold the chocolate mixture back into the remaining egg mixture until just combined.
  10. Pour the batter into the prepared cake pan.
  11. Bake for 15 minutes. The cake will be liquid in the center and slightly set on the edges.
  12. Cover the pan tightly with foil and freeze overnight until solid.
  13. To unmold, carefully dip the bottom of the pan in hot water for a few seconds, then invert onto a cake plate.
  14. Remove the pan and gently peel off the waxed paper.
  15. Decorate the cake with whipped cream and shaved bittersweet chocolate.
  16. Refrigerate until ready to serve.
  17. Meanwhile, puree the thawed raspberries and their juice in a blender or food processor.
  18. Pass the puree through a fine sieve to remove seeds.
  19. Serve a tablespoon of the raspberry sauce with each portion of the cake.
