Nectarines - Halved or Sliced recipe image

This recipe transforms fresh, ripe nectarines into a vibrant, shelf-stable preserve that captures the peak of summer flavor. Unlike peaches, nectarines have a smooth, tender skin that adds a beautiful ruby hue to the jar without the need for peeling. The result is a juicy, firm fruit that holds its shape beautifully, making it ideal for eating straight from the jar, tossing into salads, or using as a topping for yogurt and oatmeal. Whether you choose a hot pack for softer fruit or a raw pack for a firmer bite, this method ensures your harvest lasts for months. It is a simple, rewarding project for home canners looking to preserve their garden’s bounty with minimal fuss and maximum taste.

Ingredients

Directions

  1. Wash nectarines thoroughly under cool running water.
  2. Halve the nectarines lengthwise and remove the pits.
  3. For hot pack: Place nectarines in a large pot, cover with boiling water or syrup, and heat to a boil.
  4. For raw pack: Leave nectarines raw and pack them tightly into hot, sterilized jars.
  5. Ladle hot liquid over the fruit, leaving 1/2 inch headspace at the top of the jar.
  6. Remove air bubbles by inserting a non-metallic utensil into the jar.
  7. Wipe the jar rims clean with a damp cloth to ensure a good seal.
  8. Place lids on jars and screw bands on until fingertip tight.
  9. Process in a boiling-water canner according to altitude and jar size guidelines.
  10. Remove jars and let cool undisturbed for 12 to 24 hours.
