Description

This classic preparation highlights the delicate flavor of fresh shad fillets, which are marinated in olive oil, lemon, and herbs before being broiled to golden perfection. The dish is elevated by a luxurious sorrel sauce, made by boiling and sieving fresh sorrel leaves for a smooth texture, then simmering them with sautéed shallots, dry white wine, and heavy cream. The result is a rich, slightly tart sauce that cuts through the richness of the fish beautifully. Ideal for a special dinner party or a sophisticated weeknight meal, this recipe combines simple techniques with high-quality ingredients to create a memorable dining experience.

Directions

  1. Prepare the marinade by combining the olive oil, lemon juice, bay leaf, thyme sprigs, oregano, salt, and a pinch of black pepper in a shallow dish.
  2. Place the shad fillets in the marinade, turning to coat evenly, and let stand for at least 1 hour.
  3. Rinse the fresh sorrel leaves thoroughly.
  4. Boil the sorrel in a small amount of salted water for 5 to 7 minutes until very tender.
  5. Drain the sorrel well and rub it through a fine sieve to create a smooth purée.
  6. Preheat the broiler to high.
  7. In a saucepan, melt the butter over medium heat.
  8. Add the minced shallots and sauté until golden brown.
  9. Stir in the sieved sorrel and the dry white wine.
  10. Bring the mixture to a boil, then reduce heat and cook for about 10 minutes.
  11. Add the heavy cream and lower the heat, simmering the sauce gently for 5 more minutes.
  12. Season the sauce with salt and pepper to taste.
  13. Remove the shad fillets from the marinade, discarding the solid herbs and bay leaf.
  14. Place the fillets on a broiler pan and broil for 7 to 8 minutes on each side, or until cooked through and lightly browned.
  15. Transfer the broiled shad to warm serving plates.
  16. Spoon the warm sorrel sauce over the fish and serve immediately.
