Ingredients

Directions

  1. Coat the beef cutlets in flour, shaking off any excess.
  2. Dip the floured cutlets into the beaten eggs.
  3. Press the egg-coated cutlets into the breadcrumbs to lightly coat, then place on a plate and cover with plastic wrap; chill for 15 minutes.
  4. Heat 1 tablespoon of oil in a frying pan over moderate heat.
  5. Add bacon to the pan and cook, turning frequently, for 4 minutes or until browned and crisp. Drain on paper towels.
  6. Add the remaining oil to the pan.
  7. Cook the schnitzels for 3 minutes on each side or until golden brown and cooked through.
  8. During the last minute of cooking, top each schnitzel with a cheese slice to melt.
  9. Cut the bread rolls or slices in half to create bases.
  10. Top the bread bases with lettuce, beetroot slices, and tomato slices.
  11. Place a beef schnitzel and a bacon strip on top of the vegetables.
  12. Drizzle with tomato sauce and serve immediately.
