Add the drained raisins, reserved cooking liquid, 1/4 cup firmly packed brown sugar, 2 tablespoons warmed honey, 1 teaspoon ground cinnamon, melted butter, and 2 tablespoons tahini to the processor.
-
Process until the mixture comes together into a cohesive dough.

Using damp hands, roll the mixture into 16 equal-sized balls.
-
Roll each ball in shredded toasted coconut to coat evenly.
-
Transfer the balls to a plate and chill in the refrigerator for 30 minutes, or until firm.

Note
Store in an airtight container in the refrigerator for up to one week or freeze for longer storage.
If the mixture is too dry to roll, add a little more reserved cooking liquid or honey. If too wet, add more oats.
Ensure almonds are toasted for best flavor before processing.
For a vegan option, substitute butter with coconut oil or vegan butter.
Dampening hands prevents the sticky mixture from sticking to your skin while rolling.
