Directions
-
Preheat the oven to 375ðF (190ðC). Lightly grease a 9x13-inch baking dish.
-
In a large skillet over medium heat, cook the bacon until crisp. Remove bacon and drain on paper towels, reserving 1 tablespoon of bacon grease. Crumble bacon and set aside.
-
In the same skillet, cook the chicken breast and chopped red bell pepper in the reserved bacon grease until the chicken is no longer pink and peppers are tender. Add minced garlic and cook for 1 minute more.
-
Remove skillet from heat. Shred the chicken with two forks. Stir in the black beans, cumin, salt, sliced green onions, crumbled bacon, and picante sauce. Mix well to combine.
-
Spread 1/2 cup of the picante sauce mixture (or extra sauce if available) evenly in the bottom of the prepared baking dish.
-
Spoon about 1/2 cup of the chicken filling down the center of each tortilla. Roll up tightly and place seam-side down in the baking dish. Repeat with remaining tortillas and filling.
-
Pour remaining picante sauce over the rolled enchiladas. Sprinkle evenly with shredded Monterey Jack cheese.
-
Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly and the enchiladas are heated through.
-
Let stand for 5 minutes before serving. Garnish with additional green onions or cilantro if desired.
