Description

This No-Fuss Beef Lasagna is the ultimate comfort food for busy weeknights. By using uncooked lasagna noodles, you skip the tedious boiling step, making assembly quick and easy. The dish features a rich layer of lean ground beef simmered in robust spaghetti sauce and diced tomatoes, paired with a creamy mixture of part-skim ricotta, sharp Parmesan, and egg. Topped with melted mozzarella, it bakes into a golden, bubbly masterpiece that feeds a crowd and holds together beautifully for leftovers.

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large nonstick skillet, brown the ground beef over medium heat for 8 to 10 minutes, breaking it up with a spoon, until no longer pink.
  3. Pour off excess fat and drippings from the skillet.
  4. Season the beef with salt and ground red pepper; stir in the spaghetti sauce and diced tomatoes. Set aside.
  5. In a medium bowl, combine the ricotta cheese, Parmesan cheese, and beaten egg. Mix until smooth.
  6. Spread 2 cups of the beef sauce evenly over the bottom of a 13x9-inch baking dish.
  7. Arrange 4 lasagna noodles lengthwise in a single layer over the sauce.
  8. Place the 5th noodle across the end of the baking dish, breaking it to fit if necessary, and press noodles gently into the sauce.
  9. Spread the entire ricotta cheese mixture evenly over the noodles.
  10. Sprinkle with 1 cup of the mozzarella cheese and top with 1 1/2 cups of the beef sauce.
  11. Arrange the remaining 5 noodles in a single layer over the sauce, pressing lightly.
  12. Top with the remaining beef sauce, ensuring all noodles are covered.
  13. Bake uncovered for 45 minutes, or until the noodles are tender and the sauce is bubbling.
  14. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.
  15. Tent lightly with aluminum foil and let stand for 15 minutes before cutting.
  16. Cut into 12 squares (3x3 inches) and serve warm.
