Description

These No-Knead Cheddar Rolls are the ultimate comfort food, combining tender, pillowy dough with a rich, savory cheese filling. The secret lies in the simple no-knead method, which allows the gluten to develop naturally for a soft, airy crumb without the hard work. Sharp cheddar cheese is folded into the dough, creating melty pockets of flavor in every bite. The egg wash gives them a beautiful golden-brown shine and a slight crispness to the crust. These rolls are incredibly versatile, making them ideal for Thanksgiving dinner, Christmas breakfast, or simply to soak up gravy. They are best served warm straight from the oven, but their irresistible aroma will have everyone rushing to the table.

Directions

  1. Place the grated cheese in a small bowl and cover to prevent drying; set aside.
  2. Combine 1 1/2 cups unsifted flour, yeast, sugar, and salt in a large mixer bowl, blending thoroughly.
  3. Measure 3/4 cup milk, 1/2 cup water, and 3 teaspoons butter into a saucepan.
  4. Heat the liquid mixture until warm, approximately 115 to 120 degrees F.
  5. Gradually add the warm liquids to the dry ingredients in the mixer bowl.
  6. Beat for 2 minutes at medium speed, scraping the bowl occasionally.
  7. Add 1 cup of unsifted flour and beat at high speed for 2 minutes, scraping the bowl occasionally.
  8. Mix in enough additional flour (1/2 to 1 cup unsifted) to form a soft, slightly sticky dough.
  9. Transfer the dough into a greased deep bowl.
  10. Cover with waxed paper and a clean towel; let stand in a warm place until doubled in size, about 45 to 60 minutes.
  11. Generously grease several baking sheets.
  12. Melt 1/4 cup butter and set aside.
  13. Punch the dough down and turn it out onto a lightly floured surface.
  14. Divide the dough into two equal portions and set one aside.
  15. Roll the first portion into a 16 x 8-inch rectangle.
  16. Brush the dough with about half of the melted butter.
  17. Sprinkle with about half of the grated cheddar cheese.
  18. Cut the dough crosswise into 8 equal portions.
  19. Cut each portion in half lengthwise.
  20. Fold each strip into thirds, lapping each side portion over the center third.
  21. Place the formed rolls on a baking sheet.
  22. Repeat the rolling, filling, cutting, and folding process with the remaining dough portion.
  23. Beat the egg yolk with 1 teaspoon of milk.
  24. Brush the tops of the rolls with the egg yolk mixture.
  25. Let the rolls rise until doubled in size, about 30 minutes.
  26. Bake at 425 degrees F (218°C) for about 8 minutes, or until golden brown.
  27. Serve rolls hot.
