Ingredients

Directions

  1. Preheat the oven to 400ðF (200ðC). Grease a 10-inch pie plate lightly with butter or non-stick spray.
  2. In a large bowl, combine 1 1/2 cups of shredded cheddar cheese, 1 1/2 cups of cut-up cooked chicken, 2/3 cup of finely chopped onion, and 1 package (10 oz) of thawed and drained frozen chopped broccoli.
  3. Spread this mixture evenly into the bottom of the greased pie plate.
  4. In a separate medium bowl, whisk together 1 1/3 cups of milk, 3 eggs, 3/4 cup of Bisquick baking mix, 1/4 teaspoon of pepper, and 1/8 teaspoon of dried thyme leaves until the mixture is almost smooth, about 1 minute.
  5. Pour the liquid mixture evenly over the chicken and broccoli filling in the pie plate.
  6. Bake for 25 to 30 minutes, or until a knife inserted into the center comes out clean and the custard is set.
  7. Sprinkle the remaining 1 1/2 cups of shredded cheddar cheese over the top of the baked pie.
  8. Return to the oven and bake for an additional 1 to 2 minutes, just until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for 5 minutes before slicing and serving.
