Description
This unique fusion dish combines tender lamb racks with the umami richness of nori seaweed and a vibrant, aromatic glaze. The lamb is coated in crispy nori sheets and glazed with a balance of sweet sugar reduction, pungent fish sauce, and fresh aromatics like ginger, garlic, and chili. Fresh mint and coriander add a bright, herbal finish that cuts through the richness. It is an impressive main course perfect for special dinners or when you want to elevate a standard roast with bold, Asian-inspired flavors. The contrast between the crispy seaweed exterior and the juicy meat inside makes for a memorable dining experience.Ingredients
Directions
-
Preheat the oven to 400F (200C).
-
In a small saucepan, combine the sugar, water, minced ginger, minced garlic, sliced red chillies, and fish sauce. Bring to a boil, then reduce heat and simmer until the mixture thickens slightly into a glaze, about 10 minutes. Remove from heat and stir in the sesame oil.
-
Pat the lamb racks dry with paper towels. Season generously with salt and pepper.
-
Sear the lamb racks in a hot skillet with a little oil for 2-3 minutes per side until browned. Remove from skillet.
-
Place the lamb racks on a baking sheet lined with parchment paper. Brush the top of the lamb generously with the prepared glaze.
-
Carefully wrap each lamb rack with nori sheets, pressing gently to adhere to the glaze. Ensure the nori covers the meat evenly.
-
Roast in the preheated oven for 15-20 minutes, or until the lamb reaches your desired doneness (125F/52C for rare, 135F/57C for medium-rare).
-
Remove from the oven and let the lamb rest for 5 minutes before slicing.
-
Garnish with chopped fresh mint and coriander before serving.

Note
The original recipe included a list of filling ingredients (carrots, turnips, mushrooms, scallops, mango, egg) and a chili capsicum salad recipe. These appear to be accompaniments or a separate dish component not directly integrated into the lamb preparation. If desired, serve the lamb with a side salad of julienned carrots, turnips, and pickled ginger for added crunch and acidity.
Grass root (lemongrass) should be bruised and chopped finely or used as a whole stalk for infusing flavor in the glaze, then removed before serving if large pieces remain.
Nori can become soggy if applied too early. Apply it just before roasting or brush with glaze immediately before wrapping to help it adhere and crisp up slightly.
Adjust the amount of sugar and fish sauce in the glaze to balance sweet and salty flavors according to personal preference.
