  1. In a large bowl, combine the vegetable stock and white wine.
  2. In a large, heavy saucepan, combine 3 1/2 cups of the stock mixture with the pearl barley.
  3. Cover the saucepan and bring the mixture to a boil over high heat.
  4. Reduce the heat to medium-low and simmer, stirring occasionally, for 25-30 minutes, or until almost all the liquid is absorbed.
  5. Uncover the pan and stir in the remaining stock mixture, about 1/2 cup at a time, allowing each addition to absorb before adding the next.
  6. Continue simmering for about 25 minutes, or until the barley is tender and the mixture is creamy.
  7. Remove the barley from heat, cover, and set aside.
  8. Meanwhile, in a separate large saucepan, heat the olive oil over medium heat.
  9. Add the mushrooms, onion, and garlic, stirring frequently, and cook for 5-10 minutes until the mushrooms are softened.
  10. Stir in the remaining stock mixture, diced sweet potato, and fresh thyme.
  11. Cover and simmer over medium-low heat for about 8 minutes, stirring occasionally.
  12. Add the broccoli florets and cook for 6-8 minutes, or until the vegetables are tender.
  13. Stir the cooked barley into the mushroom and vegetable mixture and heat through.
  14. Sprinkle with freshly grated Parmesan cheese and season with salt and pepper to taste.
