Ingredients

Directions

  1. Preheat the oven to 400F (200C).
  2. Cream the margarine with 3/4 cup of sugar until light and fluffy.
  3. Add the egg replacer, lemon juice, and salt, mixing well until combined.
  4. Gradually add the flour and baking powder, mixing until a soft dough forms.
  5. Divide the dough into two portions: two-thirds for the base and one-third for the top.
  6. Roll the larger portion of dough on plastic wrap into an 11-inch circle.
  7. Invert the dough into a 9-inch springform pan, peel off the plastic, and press it into the bottom and up the sides. Trim excess edges.
  8. Roll the remaining dough into a 9-inch circle and set aside for the topping.
  9. In a heavy saucepan, stir 1 cup of sugar over low heat until dissolved.
  10. Increase heat and boil the sugar without stirring until it turns a deep amber caramel color.
  11. Carefully add the soy milk (it will bubble vigorously), along with the chopped nuts and remaining sugar.
  12. Cook over high heat, stirring constantly, for 5 minutes.
  13. Remove from heat and beat the marzipan into the hot mixture until smooth.
  14. Pour the filling into the prepared crust.
  15. Place the reserved dough circle on top of the filling.
  16. Bake for about 35 minutes, or until the top is golden brown.
  17. Cool completely in the pan before removing the springform ring.

Note

Safety Warning: When making caramel, the sugar mixture becomes extremely hot. Add the soy milk carefully to avoid dangerous splattering.

Nut Substitutions: You can use a mix of walnuts and almonds, or substitute with pecans or hazelnuts for a different flavor profile.

Storage: Store the torte in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. Bring to room temperature before serving for best texture.

Marzipan Tip: Ensure your marzipan is vegan if you are following a strict plant-based diet. If the marzipan is hard, let it sit at room temperature for a few minutes before beating it into the hot filling.
