Description

This hearty Oat Bran Raisin Bread is a comforting, nutritious staple perfect for breakfast or as a side to soups. The combination of oat bran, whole wheat flour, and vital wheat gluten creates a dense, satisfying texture with a nutty flavor profile. Plump raisins add natural sweetness and chew, while the crust develops a lovely golden-brown finish. Ideal for toasting with jam or avocado, this bread freezes well, making it easy to enjoy fresh slices whenever the craving strikes. It’s a wholesome choice for those seeking a fiber-rich, plant-based loaf that feels both rustic and refined.

Ingredients

Directions

  1. In a small bowl, dissolve the honey in the very warm water. Sprinkle the yeast over the water and let it sit for 5-10 minutes until foamy and active.
  2. In a large mixing bowl, whisk together the bread flour, oat bran, whole wheat flour, vital wheat gluten, wheat germ, salt, and cinnamon.
  3. Add the yeast mixture, oil, and egg whites (if using) to the dry ingredients. Mix until a shaggy dough forms.
  4. Knead the dough on a lightly floured surface for 8-10 minutes, or use a stand mixer with a dough hook on medium speed. The dough will be soft and slightly sticky due to the oat bran.
  5. During the last minute of kneading, press the raisins into the dough until evenly distributed.
  6. Place the dough in a lightly oiled bowl, turning to coat. Cover with a damp cloth or plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  7. Punch down the dough to release air bubbles. Shape into a loaf and place into a greased 9x5-inch bread pan.
  8. Cover and let rise again for 45 minutes, or until the dough rises about 1 inch above the rim of the pan.
  9. Preheat oven to 375°F (190°C).
  10. Bake the bread for 40-45 minutes, or until the top is golden brown and the internal temperature reaches 190°F (88°C). If the top browns too quickly, tent with foil.
  11. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing.
