Old-Fashioned Cabbage Rolls
Description
These old-fashioned cabbage rolls are a comforting, hearty classic that brings warm, home-style flavor to your table. The filling combines lean ground beef and pork with uncooked rice, fresh dill, and a hint of cayenne for a savory, aromatic bite. Each roll is carefully wrapped in tenderized cabbage leaves and nestled into a pot with sliced cabbage for extra texture. Simmered slowly in a rich tomato sauce with diced tomatoes, the flavors meld beautifully, resulting in a moist and satisfying dish.Ingredients
Directions
-
Remove the core from the cabbage head.
-
In a large kettle or Dutch oven, bring water to a boil and add salt.
-
Place the cored cabbage in the boiling water and cook for 2 to 3 minutes.
-
Remove the outer leaves as they soften; return the remaining cabbage to the boiling water to obtain a total of 12 large leaves.
-
Drain the leaves and remove the thick center vein from each leaf to make them pliable.
-
In a large bowl, combine the ground beef, ground pork, 1/2 cup of the tomato sauce, chopped onion, uncooked rice, parsley, salt, dill, and cayenne pepper.
-
Mix the meat mixture well until all ingredients are evenly distributed.
-
Place about 1/4 cup of the meat mixture onto the center of each cabbage leaf.
-
Fold in the sides of the leaf, then roll up tightly from the unfolded edge to completely enclose the filling.
-
Slice the remaining cabbage core and smaller pieces, and place them in the bottom of a large baking dish or Dutch oven.
-
Arrange the cabbage rolls seam-side down over the sliced cabbage layer.
-
In a separate bowl, combine the diced tomatoes, sugar, and the remaining tomato sauce.
-
Pour the tomato mixture evenly over the cabbage rolls.
-
Cover the dish tightly with foil or a lid and bake at 350°F (175°C) for 1 1/2 hours.
