Description
A comforting classic featuring boneless chicken breast simmered with leeks, carrots, and peas in a light broth. Topped with soft, fluffy cornmeal and flour dumplings, this dish delivers a satisfying balance of savory and sweet flavors. Perfect for a cozy dinner, it is easy to prepare with common pantry staples and fresh vegetables.Directions
-
Season the chicken breast with salt and pepper to taste.
-
In a small bowl, mix the flour, salt, and black pepper.
-
Heat the oil in a large pot over medium-high heat. Add the leeks, shallots, carrots, and celery. Cook until softened, about 5 minutes.
-
Add the bay leaf and fresh thyme. Stir in the seasoned flour mixture and cook for 1 minute to thicken slightly.
-
Pour in the chicken broth and apple juice. Bring to a boil, then reduce heat to a simmer. Add the chicken and cook for 15 minutes, or until the chicken is no longer pink.
-
Meanwhile, in a separate bowl, combine the flour, cornmeal, baking powder, salt, and minced parsley.
-
Stir the low-fat milk into the dry dumpling ingredients until a soft dough forms.
-
Add the thawed green peas to the pot with the chicken. Drop spoonfuls of the dumpling dough into the simmering broth.
-
Cover and simmer for 10-15 minutes, or until the dumplings are cooked through and the broth is thickened.
-
Remove the bay leaf before serving. Serve hot.
