Description

This classic Chinese dish, known as Bai Rou, highlights the pure flavor of high-quality pork through a simple boiling process. The boneless leg or loin is simmered gently with aromatics until tender, then shocked in ice water to firm up the texture for precise slicing. The result is melt-in-your-mouth meat that pairs perfectly with a robust, spicy garlic-sesame sauce. This recipe is ideal for summer gatherings or as an elegant starter, offering a balance of lean protein and bold, aromatic flavors that are both comforting and sophisticated.

Directions

  1. Bring 8 to 10 cups of water to a boil in a large pot.
  2. Add the pork, crushed green onions, crushed ginger, crushed garlic, and rice wine to the boiling water.
  3. Bring the water back to a boil, then skim off any scum that rises to the surface.
  4. Cover the pot, reduce heat to low, and simmer for 45 minutes, or until the pork is cooked through but still tender.
  5. While the pork cooks, prepare an ice bath by filling a large pan halfway with cold water and ice cubes.
  6. Remove the pork from the pot and immediately plunge it into the ice bath. Let it sit for 20 minutes to firm up the meat and juices.
  7. Remove the pork from the ice bath, pat it dry, cover it, and refrigerate until thoroughly chilled, at least 2 to 3 hours or overnight.
  8. To make the sauce, mix together the minced garlic, minced ginger, dark soy sauce, light soy sauce, hot pepper oil, sesame oil, sugar, rice vinegar, and minced coriander in a small bowl.
  9. Once chilled, slice the pork crosswise into paper-thin slices (no thicker than 1/8 inch).
  10. Arrange the pork slices in a circular pattern on a serving plate.
  11. Serve the sauce on the side or drizzle it over the pork. Garnish with fresh coriander leaves.
