Description

This luxurious onion soup transforms humble ingredients into a sophisticated dining experience. Slowly caramelized onions provide a deep, sweet foundation, while dark beer adds a complex, malty bitterness that cuts through the richness. The addition of sharp cheddar cheese creates a creamy, velvety texture without needing heavy cream. It is an ideal comfort food for chilly evenings or a hearty starter for a formal dinner. The combination of savory veal stock and nutmeg enhances the aromatic profile, making every spoonful warm and inviting. Serve it hot in a tureen for a truly communal meal that highlights the beauty of simple, well-executed cooking techniques.

Ingredients

Directions

  1. Melt the butter in a 3-quart heavy pot over low heat.
  2. Add the sliced onions and cook, covered, for 15 minutes.
  3. Uncover and continue to cook until the onions turn a deep golden color, stirring frequently, for about 30 to 40 minutes.
  4. Add the veal stock, beef broth, and nutmeg to the pot, cover, and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Meanwhile, in a small pot, bring the dark beer to a boil over medium heat.
  7. Boil the beer until the liquid has reduced by half, then remove from heat.
  8. Add the shredded Cheddar cheese to the reduced beer, stirring until completely melted.
  9. Transfer the cheese and beer mixture to a blender.
  10. Add 1 cup of the hot onion soup to the blender and blend until smooth.
  11. Reserve this cheese mixture.
  12. Remove the onion mixture from heat and strain, reserving the liquid.
  13. Transfer the cooked onions to a blender or food processor and puree until very smooth.
  14. Return the onion puree to the pot and add the reserved liquid.
  15. Stir in the reserved Cheddar cheese mixture.
  16. Taste and adjust seasoning with salt and pepper as needed.
  17. Serve piping hot in a tureen.

Note

For best results, use a heavy-bottomed pot like cast iron or copper to ensure even caramelization of the onions without burning.

If you prefer a vegetarian version, substitute the veal stock and beef broth with a robust vegetable broth.

The soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of stock if it thickens too much upon cooling.

When blending hot liquids, ensure the blender lid is vented or use an immersion blender to avoid pressure buildup.

Choose a dark beer with good malt character, such as a stout or porter, to complement the richness of the cheddar.
