Ingredients

Directions

  1. Heat a large sauté or frying pan over medium-high heat.
  2. Add a small amount of the butter (about 1/2 oz) and swirl to coat the pan.
  3. Add the mushrooms (whole if small, sliced if large) and sauté for 5 minutes until browned.
  4. Remove mushrooms from the pan and set aside, keeping them warm.
  5. Add the remaining butter to the pan.
  6. Add thinly sliced onions, separated into rings, and cook gently for 15-20 minutes until softened and caramelized.
  7. While onions cook, stir the yogurt into the sour cream and season generously with salt and pepper.
  8. Trim any membrane from the chicken livers and pat them dry with paper towels.
  9. Remove the cooked onions with a slotted spoon, allowing the buttery juices to remain in the pan, and set aside.
  10. Increase heat to high and add the chicken livers to the pan.
  11. Sauté the livers for about 3 minutes, turning once, until browned on the outside but still pink inside.
  12. Return the mushrooms and onions to the pan with the livers.
  13. Pour the seasoned sour cream mixture over the ingredients.
  14. Reduce heat to low and simmer for a few minutes until the sauce is hot, slightly reduced, and thickened.
  15. Stir gently to coat everything in the creamy sauce.
  16. Check seasoning and serve immediately with crusty bread or rice.
