Description

This vibrant Orange Crispy Beef delivers a perfect balance of textures and flavors. Thin slices of flank steak are tenderized, battered, and double-fried to achieve an exceptionally crisp exterior while remaining juicy inside. The beef is then tossed in a glossy, aromatic sauce made from fresh orange zest, ginger, garlic, and a hint of chili heat. It is a restaurant-quality dish that comes together quickly, making it ideal for busy weeknight dinners or impressive weekend gatherings. Serve it over steamed rice to soak up every drop of the zesty sauce.

Directions

  1. Cut the beef flank into thin strips diagonally across the grain for tenderness.
  2. In a small bowl, toss the beef strips with a sprinkling of salt.
  3. Stir in the beaten egg white until the beef is evenly coated.
  4. In a medium bowl, combine the flour, cornstarch, and baking powder.
  5. Mix the egg yolk with half of the water, then add to the dry ingredients.
  6. Whisk in the remaining water until a smooth, runny batter forms.
  7. Heat the deep-frying oil to 325°F (165°C).
  8. Dip the beef strips into the batter, ensuring they are fully coated.
  9. Carefully place the battered strips into the hot oil and fry for about one minute, or until the batter sets.
  10. Remove the beef and drain on paper towels; set aside.
  11. In a wok or large skillet, heat the vegetable oil over medium-high heat.
  12. Add the ginger, garlic, orange zest, hydrated mandarin zest, and scallions.
  13. Stir fry the aromatics for about 30 seconds until fragrant.
  14. Add the chili sauce, cooking wine, chicken broth, soy sauce, and sugar to the wok.
  15. Stir continuously until the sauce thickens and becomes shiny.
  16. Remove the sauce from heat and keep warm.
  17. Increase the heat of the deep-frying oil and re-fry the beef strips until golden and crispy.
  18. Drain the beef strips again on paper towels.
  19. Quickly toss the crispy beef strips into the thickened orange sauce to coat evenly.
  20. Serve hot immediately with bowls of steamed rice.
