Description

This vibrant Orange Rosemary Syrup is a versatile culinary addition that brings a burst of fresh citrus and earthy herbal aroma to your cooking. By simmering water with fresh rosemary, you create a delicate infusion that serves as the perfect base for the sweet, tangy juice of fifteen oranges. The result is a rich, glossy syrup that balances sweetness with a sophisticated aromatic complexity. It is incredibly versatile, perfect for drizzling over pancakes, yogurt, or fruit salads. You can also use it to deglaze pans when roasting chicken or pork, adding a beautiful glaze. For a refreshing beverage, simply mix it with sparkling water or add it to cocktails. This homemade syrup elevates everyday desserts and drinks with a professional, homemade touch that is both elegant and easy to prepare.

Ingredients

Directions

  1. In a non-aluminum saucepan, bring the water to a boil.
  2. Pour the boiling water over the chopped rosemary and let steep for 1 hour.
  3. Strain the rosemary infusion to remove the herbs.
  4. Remove the zest from 5 of the oranges using a zester or fine grater, being careful to avoid the bitter white pith.
  5. Squeeze the juice from the oranges into a large bowl.
  6. Set a rack or sieve over the bowl containing the juice and arrange the orange zests on the rack so they are suspended above the juice.
  7. Combine the strained rosemary infusion and sugar in a saucepan.
  8. Bring the mixture to a boil over high heat, then reduce heat and simmer until it reduces to a heavy syrup consistency, about 20 minutes.
  9. Pour the boiling hot syrup directly over the orange zests on the rack, allowing it to drip down into the orange juice below.
  10. Return the combined juice and syrup mixture to the saucepan.
  11. Bring the mixture quickly to a boil, then immediately remove from heat.
  12. Pour the mixture back into the bowl to cool.
  13. Skim any foam from the surface, then bottle the syrup and store in the refrigerator.
