Note
Garnish Suggestions: For extra color and flavor, garnish with blanched pea pods, thin scallion slices, celery leaves, toasted sesame seeds, or finely shredded lettuce.
Scallion Tip: You can substitute or add 2 scallions, chopped or diagonally sliced, along with shredded leaves for extra freshness.
Variations: Substitute 1 cup of cooked brown rice for the buckwheat noodles for a different texture. You can also add other vegetables such as chopped green peppers, water chestnuts, jicama root, shredded spinach, chopped celery, or bamboo shoots.
Shortcut: To shorten prep time, use only two vegetables besides the onion, such as peas.
Spice Level: For a "hotter" soup, substitute 1/2 to 1 teaspoon of dry crushed red pepper flakes.
Finishing Touches: Stir in 1 teaspoon of toasted sesame oil or 1/2 teaspoon of Chinese hot oil just before serving for added aroma.
Egg Thread Variation: For additional protein and visual appeal, stir egg threads into the soup just before serving. To make egg threads: Heat a little margarine in a small skillet. When bubbling, add 1 egg beaten with a little cold water. Tilt the pan to coat it in a thin layer. When lightly cooked, turn out onto a cutting board and slice into very thin strips (makes about 1/3 cup). Note: This variation makes the dish vegetarian, not vegan.
