Ingredients

Directions

  1. Slice the beef into thin strips against the grain for tenderness.
  2. Prepare all vegetables: slice celery, dice green pepper, chop green onions, trim green beans, and slice carrots.
  3. Cook the brown rice according to package directions and set aside.
  4. Prepare chow mein noodles according to package instructions if using, and set aside.
  5. Heat oil in a large wok or heavy skillet over high heat until shimmering.
  6. Add beef strips in a single layer and sauté until browned, about 2-3 minutes. Remove beef from wok and set aside.
  7. In the same wok, add harder vegetables first: carrots, green beans, and celery. Stir-fry for 2 minutes.
  8. Add mushrooms, bamboo shoots, water chestnuts, snow peas, and bean sprouts. Stir-fry for another 2-3 minutes.
  9. Return the beef to the wok.
  10. Dissolve beef bouillon cube in 1 cup of water and pour into the wok.
  11. Add soy sauce and stir well to combine all ingredients.
  12. Cover the wok and let simmer for 2-3 minutes until vegetables are tender-crisp.
  13. Taste and adjust seasoning with additional soy sauce if needed.
  14. Serve the stir-fry mixture heated over cooked brown rice or chow mein noodles.

Note

Do not overcook the vegetables; they should retain their bright colors and crisp texture.

For a richer sauce, you can add a teaspoon of cornstarch mixed with water to thicken the broth slightly.

Feel free to substitute vegetables based on preference or availability. Broccoli, zucchini, and bell peppers work well.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to maintain vegetable texture.

If using chow mein noodles, ensure they are drained well to prevent sogginess when mixing with the stir-fry.

For a gluten-free version, use tamari instead of soy sauce and ensure bouillon cube is gluten-free.
