Description

These Oyster Croquettes are a decadent fusion of textures and flavors, perfect for an elegant appetizer or a unique main course. The dish features whole shucked oysters nestled inside a rich, savory filling of minced mushrooms, shallots, and a classic béchamel sauce. The result is a crunchy exterior giving way to a hot, creamy, and briny interior. Serve with lemon wedges and watercress for a fresh, zesty contrast that cuts through the richness. Ingredients

Directions

  1. Melt 1/4 cup butter in a saucepan over medium heat. Whisk in 1/4 cup flour to form a roux, cooking for 1-2 minutes until bubbly.
  2. Gradually whisk in 1 cup milk, continuing to stir until the sauce thickens and smooths out. Season with salt and pepper. Set aside to cool slightly.
  3. In a large skillet, melt the remaining 3 tbsp butter over medium-high heat. Add minced shallots and cook until softened, about 2 minutes.
  4. Add minced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms have released their moisture and are browned, about 8-10 minutes.
  5. In a large bowl, combine the mushroom mixture with the cooled béchamel sauce. Mix well.
  6. Pat the shucked oysters dry with paper towels. Gently fold the oysters into the mushroom and béchamel mixture, being careful not to break them.
  7. Using a spoon or your hands, shape the mixture into small logs or oval croquettes. Place them on a baking sheet lined with parchment paper.
  8. Refrigerate the shaped croquettes for at least 30 minutes to firm up, which helps them hold their shape during frying.
  9. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with fresh bread crumbs.
  10. Heat vegetable oil in a deep fryer or heavy pot to 350ðF (175ðC).
  11. Remove croquettes from the fridge. Coat each one in flour, shaking off excess. Dip into the egg wash, then roll in bread crumbs until fully coated.
  12. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Do not overcrowd the pot.
  13. Transfer fried croquettes to a wire rack or paper towels to drain excess oil.
  14. Serve immediately, garnished with watercress and lemon wedges.

Note

Ensure the oysters are patted very dry before mixing into the filling to prevent the mixture from becoming too wet and difficult to shape.

The chilling step is crucial; it allows the croquettes to set so they don't fall apart when handled or fried.

For a lighter version, you can bake the croquettes at 400ðF (200ðC) for 15-20 minutes, turning halfway, until golden, though they will not be as crispy as deep-fried.

Use a thermometer to monitor oil temperature. If the oil is too hot, the outside will burn before the inside is heated through; if too cool, the croquettes will absorb too much oil.

Fresh bread crumbs provide a better texture than dry store-bought crumbs, but if using dry crumbs, you can moisten them slightly with a little milk or egg wash.
