Description

Oysters Randall is a sophisticated appetizer that combines the briny sweetness of fresh oysters with a rich, savory spinach and bacon filling. Topped with a delicate puff pastry cap and melted Swiss and Asiago cheeses, each bite offers a luxurious contrast of textures: the crisp, flaky pastry, the tender spinach mixture, and the smooth, creamy oyster. The addition of hazelnut liqueur and white wine adds a subtle nutty depth to the sauce. This dish is perfect for special occasions, holiday gatherings, or as an impressive starter for a romantic dinner. It requires careful assembly but rewards you with a gourmet experience that feels both indulgent and refined.

Directions

  1. Thaw frozen spinach and squeeze out excess liquid using cheesecloth or hands; reserve the liquid.
  2. In a medium sauté pan, cook chopped bacon over medium heat until almost done but still slightly pink.
  3. Add chopped onion and minced garlic to the bacon; cook until onions are golden and translucent.
  4. Remove the bacon and onion mixture from the pan and set aside.
  5. Shuck oysters carefully, keeping the half-shell with the oyster and the empty half-shell for later use; drain the oyster liquor into the empty sauté pan.
  6. Add the reserved spinach liquid and thyme to the oyster liquor in the pan; boil over medium heat until reduced to about 1/4 cup.
  7. Stir in heavy cream and hazelnut liqueur; continue cooking until the mixture thickens slightly.
  8. Season the cream sauce with white pepper to taste.
  9. In a mixing bowl, combine the squeezed spinach, bacon-onion mixture, and the cream sauce; stir until thoroughly combined.
  10. Place the oysters in their shells on a baking sheet.
  11. Top each oyster with 1-2 tablespoons of the spinach mixture.
  12. Sprinkle each oyster with grated Swiss cheese and half as much Asiago cheese.
  13. Roll out the puff pastry sheet on a lightly floured surface.
  14. Use the empty oyster shells as templates to cut out pastry circles that fit over the oysters.
  15. Place a pastry circle on top of each oyster, sealing the edges if necessary.
  16. Whisk the egg with 1 tablespoon of water to create an egg wash.
  17. Brush the tops of the pastry circles with the egg wash.
  18. Bake in a preheated 400-degree oven for 30-40 minutes, or until the pastry is dark golden brown and puffed.
  19. Serve immediately while hot.
